Ingredients

  • 450 grams all-purpose flour
  • 20 grams instant yeast
  • 2 tablespoons flour, for activating the yeast
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 250 milliliters warm water
  • 100 milliliters olive oil
  • 2 cloves garlic, minced
  • Fresh basil, chopped (to taste)
  • Fresh parsley, chopped (to taste)
  • Black olives, sliced (optional)
  • Mozzarella cheese, shredded (optional)

Instructions

  1. Activate the yeast: In a small bowl, combine 2 tablespoons of flour and the sugar. Add the yeast and 1/4 cup of the warm water. Stir until dissolved and let it sit for 10 minutes until foamy.
Combine dry ingredients: In a large bowl, whisk together the remaining flour and salt.
  2. Make the dough: Add the activated yeast mixture and the remaining warm water to the dry ingredients. Mix until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  3. First rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 30 minutes until doubled in size.
  4. Flavor time: Add the olive oil, minced garlic, and half of the chopped herbs to the dough. Knead briefly to incorporate them evenly.
  5. Shape and second rise: Shape the dough into a round loaf and place it on a greased baking sheet. Cover it again and let it rise for another 20 minutes.
  6. Top it off: Preheat your oven to 180°C (350°F). Gently brush the top of the bread with olive oil and sprinkle with the remaining chopped herbs, black olives (if using), and mozzarella cheese (if using).
  7. Bake to perfection: Bake the bread for 20-25 minutes until golden brown and cooked through.
  8. Enjoy! Let the bread cool slightly before slicing and serving.

Tips

  • For a richer flavor, use half whole wheat flour and half all-purpose flour.
