Ingredients

  • 1 pound long-grain rice
  • Water, for soaking and cooking
  • 1 large yellow potato, peeled and diced (about 2 cm)
  • 1 carrot, peeled and diced (about 2 cm)
  • 5 shiitake mushrooms, diced (about 2 cm)
  • 2 sausages, sliced
  • Cooking oil
  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 tablespoon salt
  • 1/4 teaspoon black pepper
  • 1/2 tablespoon chicken bouillon powder
  • 1 tablespoon white sugar
  • 4 cloves garlic, sliced
  • 4 eggs

Instructions

  1. Soak the rice: Rinse the rice in a pot until the water runs clear. Soak the rinsed rice in water for 2 hours.
  2. Prepare the vegetables: While the rice soaks, peel and dice the potato, carrot, and mushrooms. Cut the sausages into small pieces.
  3. Sauté the ingredients: Heat oil in a wok or large pan. Fry the sausages until fragrant. Add the diced vegetables and mushrooms, and stir-fry for 2 minutes.
  4. Add seasonings: Add the light soy sauce, dark soy sauce, oyster sauce, salt, pepper, chicken bouillon powder, and white sugar. Stir-fry for 1 minute until the sauces are incorporated.
  5. Boil the ingredients: Add water to the pan and bring to a boil.
  6. Transfer to rice cooker: Transfer the boiled ingredients and water to the inner pot of your rice cooker.
  7. Prepare the rice: Drain the soaked rice and add it to the rice cooker pot. Spread the rice evenly over the ingredients.
  8. Add eggs: Gently place the whole eggs on top of the rice.
  9. Cook: Close the lid of the rice cooker and press the “cook” button.
  10. Fluff and serve: After cooking, let the rice stand for 10 minutes before opening the lid. Fluff the rice with a fork and serve.

Tips

  • Feel free to adjust the amount of vegetables and sausage to your liking.
  • You can also use other vegetables, such as peas, broccoli, or bell peppers.
  • If you don’t have a rice cooker, you can cook the rice on the stovetop according to package instructions.
  • For a vegetarian option, omit the sausages.
  • Garnish with chopped fresh herbs, such as parsley or cilantro, for additional flavor.
